Chef Gray Kunz was a visionary in the kitchen. Drawing on flavors he came to know as a child in Singapore and later during five years as a chef in Hong Kong, he married classic French technique with Pan-Asian ingredients, and he was known as much for his exacting standards and the excellence he demanded from his staff as for his cuisine. As executive chef of the legendary Lespinasse restaurant in New York City, he earned a four-star review from the New York Times, the first Ruth Reichl ever gave, along with multiple James Beard nominations for Outstanding Chef. The kitchens he commanded went beyond the norm and codified things that others might take for granted. In that spirit, during the early 1990s at Lespinasse, he set out to create the perfect spoon for his staff.

For a professional chef, a good spoon is essential, with uses from basting to flipping meat to delicate operations like plating, saucing, and forming quenelles. Being able to do so much with one tool, and with precision, saves an enormous amount of time and effort in the kitchen. Consequently, having a good spoon at one's disposal is crucial.

Chef Kunz brought his design to Judy Prince, who sought out a factory to bring it to production. They first made it for the team in Kunz's own kitchen, where his devoted team was ecstatic to use it. In 1998, JB Prince introduced the Gray Kunz Spoon to the general public in its catalog, and it quickly became an essential tool of the trade. Today it is still produced by JB Prince, in partnership with the Kunz family, at the same European factory Judy found many years ago.
