Kiritsuke are a fusion of the  a Japanese fish slicer (yanagi) and vegetable knife (usuba). They have enough length for slicing fish and an elongated flat sections for chopping vegetable.

Zanmai continues to challenge traditional norms and look for ways to rethink the ergonomics, materials, and styling of kitchen knives. The Revolution series embodies all of these elements from their uniquely styled decagonal handle to SPG2 stainless steel blades.  The ergonomic handles are crafted from a linen micarta with a look that mimics the grain of wood and contains varying tones of gray, black, and green. They are accented with a single mosaic pin and white spacer furthering the detail and adding to the unique look. The ten sided handle has carefully positioned facets and subtle curves lending clean lines and an exceptionally comfortable grip. The choil and bolster have been rounded to add to the comfort and elevate the finish work of these well crafted knives. The blade steel is SPG2, powdered steel is known for its superior resistance to wear and corrosion. The Rockwell hardness level is at 61HRC, giving the blade a keen and lasting edge. The blades are manually drawn by skilled craftsmen to molybdenum · vanadium material which was baked at proper temperature are finished in a sharp sharpness.

What is "Zanmai"?

"Zanmai" is used in Japanese language to mean "luxury". The word is however in fact derived from the Sanskrit term "Samadhi", which refers to the state of consciousness induced by complete mediation. We trust you will find that our knives match their "Zanmai" name in all its meanings.

Attention

Do not cut frozen food, bones or other hard objects. Keep away from bleach, acid, high heat and open flame. Do not wash in machine.

Knife Care

After using, wash knife carefully with mild detergent on a soft sponge and rinse well with clean water. After washing, dry blade and handle carefully and thoroughly with a dry towel. Store knife in a ventilated but safe location. Hone and sharpen blade regularly.
