The Pan That Didn't Exist: How Chefs Led Us to the Small Saucepan
Chefs kept asking us for a pan that didn't exist. So we went to France and had one made.
Listening to chefs and going the distance for them is what JB Prince has always done. In fine dining, chefs use a lot of product in very small amounts. They plate small dishes à la minute, or to order, and no one wants to waste anything. They want to heat only what's necessary in the moment, and that takes pans sized for it.
We started with a 0.75-quart, 12 cm saucepan from Mauviel in France. Then our friends at de Buyer in France made us a 9 cm saucepan: riveted, with cast iron handles, built from five-ply stainless steel in a size chefs love. It was one of the best-made 9 cm saucepans you'd ever see.
This is how JB Prince works. We've always looked for ways to make people's jobs easier in the kitchen, with the highest quality products from factories all over the world. This one happens to come from France, and it's a story we love to tell.
